Ingredients:
1 1/2 lbs ground pork (or a mix of pork and beef)
6 cloves garlic, finely minced
1 tablespoon smoked paprika
1 teaspoon dried oregano
1/2 teaspoon ground black pepper
1/2 teaspoon red pepper flakes (optional for a bit of heat)
1/2 teaspoon ground coriander
1 tablespoon salt
1 tablespoon olive oil (for frying)
Sausage casings (optional, if making links)
Instructions:
Prepare the sausage mixture: In a large mixing bowl, combine the ground pork, minced garlic, smoked paprika, oregano, black pepper, red pepper flakes (if using), coriander, and salt. Mix everything thoroughly with your hands or a wooden spoon until well combined.
Shape the sausage: If you’re not using sausage casings, shape the sausage mixture into patties or logs. If using sausage casings, stuff the sausage mixture into the casings, twisting into individual links as desired.
Cook the sausage:
For pan-frying: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausage patties or links and cook for 4-5 minutes per side, or until golden brown and fully cooked through (internal temperature should reach 160°F/71°C).
For grilling: Preheat the grill to medium-high heat. Grill the sausage links for 8-10 minutes, turning occasionally, until browned and cooked through.
For baking: Preheat the oven to 375°F (190°C). Place the sausages on a baking sheet and bake for 20-25 minutes, turning halfway through.
