Cheesy Baked Fajita Chicken
Ingredients:
4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper, to taste
1 bell pepper, sliced
1 onion, sliced
1 cup shredded Mexican cheese blend
1/4 cup sour cream
Fresh cilantro, chopped for garnish
Directions:
Preheat your oven to 375°F (190°C).
Season chicken breasts with chili powder, cumin, garlic powder, onion powder, salt, and pepper.
Heat olive oil in a large ovenproof skillet over medium-high heat. Add the chicken and sear until golden, about 4-5 minutes per side. Remove from skillet and set aside.
In the same skillet, add the sliced bell pepper and onion, sautéing until just tender, about 3-4 minutes.
Return the chicken to the skillet. Top with shredded cheese.
Bake in the preheated oven for 15-20 minutes until the chicken is cooked through and the cheese is melted and bubbly.
Serve hot, garnished with sour cream and chopped cilantro. Ideal alongside rice, tortillas, or salad.
