Green Tea, Lemon & Ginger Gummies
Ingredients:
1 cup green tea, brewed strong
Juice of 1 lemon
1 tablespoon fresh ginger, grated
3 tablespoons honey (or to taste)
3 tablespoons unflavored gelatin powder
Directions:
Brew the green tea and allow it to steep with the grated ginger for 10 minutes. Strain to remove the ginger pieces and pour the tea into a small saucepan.
Add lemon juice and honey to the green tea. Heat over low heat, but do not boil.
Gradually whisk in the gelatin powder until fully dissolved.
Pour the mixture into silicone molds or a shallow dish lined with plastic wrap for easy removal.
Refrigerate for at least 2 hours, or until the gummies are firm.
Once set, remove the gummies from the molds or cut into bite-sized pieces if set in a dish.
Store in an airtight container in the refrigerator. Enjoy a gummy or two as a refreshing, healthy snack.
