Rice Krispie Chocolate Chip Cookies
Ingredients:
1 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup brown sugar, packed
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups Rice Krispies cereal
1 cup chocolate chips
Directions:
Preheat your oven to 350°F (175°C). Line cookie sheets with parchment paper.
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the creamed mixture, mixing well.
Gently fold in the Rice Krispies cereal and chocolate chips, being careful not to crush the cereal too much.
Drop by rounded tablespoonfuls onto the prepared cookie sheets.
Bake for 10-12 minutes in the preheated oven, or until the edges are lightly golden.
Remove from the oven and let cool on the cookie sheets for a few minutes before transferring to wire racks to cool completely.
