Snickerdoodle Cookie Bars
Ingredients:
2 2/3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 cup butter, softened
1 3/4 cups granulated sugar
2 eggs
1 tablespoon vanilla extract
2 tablespoons sugar
2 teaspoons ground cinnamon
Directions:
Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan.
In a bowl, whisk together flour, baking powder, and salt.
In a large bowl, cream together butter and 1 3/4 cups sugar until light and fluffy. Beat in eggs, one at a time, then stir in vanilla extract.
Gradually stir in the flour mixture until just combined.
Spread the batter evenly in the prepared pan.
Mix 2 tablespoons sugar with cinnamon and sprinkle over the top of the batter.
Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
Let cool in the pan before cutting into bars and serving.
