Amish Applesauce Cake
Ingredients:
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup brown sugar
2 large eggs
1 1/2 cups unsweetened applesauce
1/2 cup raisins (optional)
1/2 cup chopped walnuts (optional)
Directions:
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch square cake pan.
In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time.
Alternately add the flour mixture and applesauce to the butter mixture, starting and ending with the flour mixture. Stir just until combined.
Fold in the raisins and walnuts if using.
Pour the batter into the prepared cake pan and smooth the top.
Bake in the preheated oven for about 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean.
Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
