Chocolate Buttermilk Cake
Ingredients:
2 cups all-purpose flour
1 1/2 cups granulated sugar
1/2 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 large eggs
1 cup buttermilk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup hot water
For the frosting:
1/2 cup butter, softened
2 cups powdered sugar
1/3 cup unsweetened cocoa powder
1/4 cup heavy cream
1 teaspoon vanilla extract
Directions:
Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
Add eggs, buttermilk, oil, and vanilla to the flour mixture and mix until smooth.
Gradually add hot water and stir until the batter is well combined. The batter will be thin.
Pour the batter into the prepared baking pan.
Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
For the frosting, beat the softened butter with powdered sugar and cocoa powder until creamy. Gradually add heavy cream and vanilla extract, and continue beating until smooth and spreadable.
Once the cake is completely cooled, spread the frosting evenly over the top.
