The Best Meatloaf
Ingredients:
2 pounds ground beef (80/20 blend for moisture)
1 medium onion, finely chopped
2 cloves garlic, minced
1 cup bread crumbs
1/2 cup milk
2 large eggs, beaten
1/3 cup ketchup
2 tablespoons Worcestershire sauce
1 teaspoon dried thyme
Salt and pepper to taste
For the glaze:
1/2 cup ketchup
2 tablespoons brown sugar
1 tablespoon apple cider vinegar
1 teaspoon mustard powder
Directions:
Preheat your oven to 350°F (175°C). Grease a loaf pan.
In a large bowl, combine the ground beef, onion, garlic, bread crumbs, milk, eggs, ketchup, Worcestershire sauce, thyme, salt, and pepper. Mix until just combined; overmixing can make the meatloaf tough.
Shape the mixture into a loaf and place it in the prepared pan.
In a small bowl, mix together the ingredients for the glaze: ketchup, brown sugar, apple cider vinegar, and mustard powder.
Spread the glaze over the top of the meatloaf.
Bake in the preheated oven for about 1 hour and 15 minutes, or until the meatloaf is cooked through and the glaze is caramelized.
