Cranberry Bread with Orange Glaze
Ingredients:
For the bread:
2 cups all-purpose flour
1 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup fresh cranberries, roughly chopped
1 tablespoon orange zest
3/4 cup orange juice
2 eggs
1/4 cup vegetable oil
For the glaze:
1 cup powdered sugar
2 tablespoons orange juice
1 teaspoon orange zest
Directions:
Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Stir in chopped cranberries and orange zest.
In another bowl, mix together orange juice, eggs, and vegetable oil. Add the wet ingredients to the dry ingredients, stirring just until combined.
Pour the batter into the prepared loaf pan. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
For the glaze: Whisk together powdered sugar, orange juice, and orange zest until smooth. Drizzle over the cooled bread.
Let the glaze set before slicing and serving.
