Cheddar-Crusted Ground Beef and Rice Casserole
Ingredients:
1 tablespoon olive oil
1 onion, finely chopped
2 cloves garlic, minced
1 pound ground beef
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
2 cups cooked rice
1 can (15 oz) tomato sauce
1 cup frozen peas and carrots
2 cups shredded cheddar cheese
Directions:
Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing until onions are translucent.
Add the ground beef to the skillet. Season with salt, pepper, and paprika. Cook until the beef is browned and no longer pink, breaking it up with a spoon as it cooks. Drain any excess grease.
Stir in the cooked rice, tomato sauce, and frozen peas and carrots. Mix well to combine all the ingredients.
Transfer the beef and rice mixture to the prepared baking dish. Evenly sprinkle the shredded cheddar cheese over the top.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
