Homemade Chicken Noodle Soup
Ingredients:
2 tablespoons olive oil
1 large onion, chopped
3 carrots, peeled and sliced
2 celery stalks, sliced
3 cloves garlic, minced
8 cups chicken broth
2 teaspoons dried thyme
1 teaspoon dried parsley
Salt and pepper to taste
2 cups cooked chicken, shredded
2 cups egg noodles
Directions:
In a large pot, heat the olive oil over medium heat. Add the onion, carrots, celery, and garlic. Cook until the vegetables are softened, about 5-7 minutes.
Pour in the chicken broth and bring to a boil. Add the thyme, parsley, salt, and pepper.
Reduce the heat and simmer for about 20 minutes to let the flavors meld.
Add the shredded chicken and egg noodles to the pot. Continue to simmer for another 10-12 minutes, or until the noodles are tender.
Adjust seasoning with additional salt and pepper if needed.
