Walking Taco Casserole
Ingredients:
1 pound ground beef
1 packet taco seasoning
1/2 cup water
1 (15 oz) can black beans, drained and rinsed
1 (15 oz) can corn, drained
1 (10 oz) can diced tomatoes with green chilies
2 cups crushed tortilla chips, plus more for topping
2 cups shredded cheddar cheese
Sour cream, diced tomatoes, and sliced green onions for garnish
Directions:
Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
Stir in taco seasoning and water. Bring to a simmer and cook until thickened, about 5 minutes.
Add black beans, corn, and diced tomatoes with green chilies to the skillet. Stir to combine.
Spread half of the crushed tortilla chips in the bottom of the prepared baking dish. Layer with the beef and vegetable mixture. Sprinkle with one cup of cheddar cheese.
Repeat the layers with the remaining tortilla chips, beef mixture, and cheddar cheese.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Serve hot, garnished with sour cream, diced tomatoes, and green onions.
