Ingredients:
– 4 boneless, skinless chicken breasts
– 1 cup all-purpose flour
– 2 large eggs, beaten
– 2 cups breadcrumbs
– 1 cup grated Parmesan cheese, divided
– 2 cups marinara sauce
– 1 cup shredded mozzarella cheese
– 1 pound mostaccioli pasta
– 4 cloves garlic, minced
– 4 tablespoons butter
– 1 loaf Italian bread, sliced
– Salt and pepper to taste
– Olive oil for frying
Directions:
1. Preheat oven to 375ยฐF (190ยฐC).
2. Season chicken breasts with salt and pepper. Dredge in flour, dip in beaten eggs, and then coat with a mixture of breadcrumbs and 1/2 cup Parmesan cheese.
3. Heat olive oil in a large skillet over medium-high heat. Fry chicken until golden brown on both sides. Transfer to a baking dish.
4. Pour marinara sauce over the chicken. Top with mozzarella cheese and remaining Parmesan cheese. Bake for 20-25 minutes, or until cheese is bubbly and chicken is cooked through.
5. Meanwhile, cook mostaccioli according to package instructions; drain.
6. For the garlic bread, mix butter with minced garlic. Spread over slices of Italian bread and bake until golden brown, about 10 minutes.
7. Serve chicken parmesan over a bed of mostaccioli, accompanied by garlic bread.
