Baked Lobster Tails with Garlic Herb Butter Sauce and Mashed Potatoes
Ingredients:
For the Lobster Tails:
4 lobster tails
4 tbsp unsalted butter (melted)
2 cloves garlic (minced)
1 tbsp fresh parsley (chopped)
1 tsp lemon juice
1/4 tsp paprika
Salt and black pepper (to taste)
For the Mashed Potatoes:
4 medium Yukon Gold potatoes (peeled and cubed)
3 tbsp unsalted butter
1/4 cup heavy cream (or milk)
Salt and black pepper (to taste)
Instructions:
1. Prepare the Mashed Potatoes:
Boil the cubed potatoes in salted water for 15-20 minutes, or until fork-tender.
Drain the potatoes and mash with butter and heavy cream until smooth. Season with salt and pepper. Cover and keep warm.
2. Prepare the Lobster Tails:
Preheat your oven to 425°F (220°C).
Using kitchen scissors, cut down the center of the lobster tail shells, stopping before the tail fin. Gently pull the meat out of the shell and place it on top, keeping it attached at the base.
Place the lobster tails on a baking sheet lined with parchment paper.
3. Make the Garlic Herb Butter Sauce:
In a small bowl, mix melted butter, minced garlic, parsley, lemon juice, paprika, salt, and black pepper.
Brush the sauce generously over the lobster meat, reserving a little for serving.
4. Bake the Lobster Tails:
Bake for 10-12 minutes, or until the lobster meat is opaque and reaches an internal temperature of 140°F (60°C). Avoid overcooking.
5. Serve:
Plate each lobster tail alongside a generous serving of mashed potatoes. Drizzle the remaining garlic herb butter sauce over the lobster tails and garnish with extra parsley and a lemon wedge.
