Pineapple Coconut God Bless America Cake
Ingredients:
1 (15.25 oz) package white cake mix
1 (20 oz) can crushed pineapple, with juice
1 cup coconut milk
3 eggs
1/2 cup vegetable oil
1 teaspoon vanilla extract
1 cup shredded coconut
1 cup chopped pecans
1 cup coconut flakes, toasted, for topping
Directions:
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the white cake mix, crushed pineapple with its juice, coconut milk, eggs, vegetable oil, and vanilla extract. Mix until well blended.
Fold in shredded coconut and chopped pecans.
Pour the batter into a greased 9×13 inch baking dish.
Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Remove from oven and let cool completely. Once cool, sprinkle toasted coconut flakes over the top.
