Slow Cooker Garlic Butter Beef Bites & Potatoes
Ingredients:
2 lbs beef stew meat, cut into 1-inch cubes
1 lb baby potatoes, halved
1/2 cup unsalted butter, melted
5 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh parsley, finely chopped
1/2 cup beef broth
Directions:
Place the halved baby potatoes in the bottom of the slow cooker.
Top with the beef cubes, evenly spreading them out.
In a small bowl, mix together the melted butter, minced garlic, salt, and black pepper.
Pour the garlic butter mixture over the beef and potatoes in the slow cooker.
Pour beef broth around the edges of the slow cooker to avoid washing off the butter mixture.
Cover and cook on low for 7-8 hours or on high for 3-4 hours, until the beef is tender and the potatoes are cooked through.
Sprinkle with chopped parsley before serving.
Serve hot, spooning the buttery sauce over the beef and potatoes.
